Byadgi Long red

The natural colour standard

Also known as BSS 355 · 355

India's benchmark chilli for natural colour — long, wrinkled, deep-red pods with comparatively mild heat. Grown and processed to the low-pungency, high-ASTA profile the trade knows as Byadgi, it's the standard for oleoresin, curry colour and paprika-style blends.

About Byadgi

Byadgi takes its name from the town of Byadagi in Karnataka, where the type originates, and is one of the most recognised chilli names in the Indian spice trade. It's grown less for heat and more for its exceptional natural red colour and thick, wrinkled skin, which is why it's the standard choice for oleoresin extraction, curry powders and natural food colouring worldwide. Our Byadgi-type lots are grown and processed in Guntur to the same colour-forward, low-pungency profile the trade name is known for.
